SUNCHOKE
Winter vegetables are a problem. I am allergic to parsnips, tired of ever-present potatoes, refuse to pay $6 for a head of cauliflower, and am the only person left on the planet not addicted to kale. This leaves the cabbage family, spinach –and Jerusalem artichokes. I can’t remember the last time I ate time had this lovely tuber. One of the best things about root vegetables is they are rarely bought excessively under-ripe, and since most folks roast or mash them, they are rarely too ripe.
