TAMALE
I love tamales. My life has been dotted with expert tamale makers–the Mexican version. Then I tried Guatemalan tamales. Oh my. The differences are subtle, but important. In Guatemalan tamales, the corn used to make the masa (dough) is not sweet, and they are usually wrapped in leaves, not corn husks. Tamales can come in red & black varieties, both sweet & savory, both large & small. If are the winner of this next Call, they pick up the tab for your ticket & hotel to the opening. Be sure to pick up a tamale while you are in Guatemala! Take a look…
