I’ve had many a conversation about why some foods, eggs & bread & oysters for example, come in dozens. I’ve heard that it is easier to divide because it has more factors (1, 2, 3, 4 & 6). I’ve heard that a bakers dozen (13) exists merely so delivery men don’t eat part of the order making the baker look like a cheat. I’ve heard it originated in the fact that there were 12 pennies in a shilling which made sales without change making easier. None of these are verifiable though. Did you know there is even a Dozenal Society that advocates for 12 as our base number instead of 10? What makes comfort food a comforting food? I have a friend whose local tradition is bring food to a grieving family. Upon the death of her cousin, she noted that a half-dozen dishes of macaroni and cheese, two layered dips and three lasagnas, none of them comforting to all. For me it is fried green tomatoes, and occasionally goat cheese. After a little research it seems that it isn’t the cheese or butter or starch that makes comfort food, it is familial connection, the security of childhood (if you had any). I am fairly certain my father never tasted goat cheese in his life, but my grandmother made the best fried green tomatoes ever. So, maybe. I don’t know. What do you think? Green onions are among the first shoots sent up in Spring. They taste like the more refined cousin of wild onions whose smell I associate with fresh-cut grass. The greens are only fresh for a few days, but the bulbs protect themselves by turning outer layers into a husk-like spring jacket. During the winter, I’m grateful for the extra heat of the oven after lunch or dinner. I usually leave the oven door open until it reaches room temp. However, come Summer, or even Spring for that matter, I will start looking for alternative ways to cook without having to combat the heat of the oven for the rest of the day. Ceviche may be the simplest of them all. Ceviche is a method of cooking fish or seafood in citrus juice alone –without heat. When I can find decent greens, salads are winter food in my house. The secret? Toasted walnuts.
