I only feel justified making pavlova during a holiday week. Pavlova (like the one at left by Tanya Zouevis) a little like two meringues kiss–through sweetened whipped cream. I think it has to do with the temporary nature of the fragile, crispy meringue and the fluffy (but easily flattened) whipped cream. We’ve just finished with New Year’s Day, and I’m already looking for a holiday. MLK Jr. Day doesn’t usually strike me as a day earmarked for indulgence. What’s after the next holiday?
