If you’re not vegan, and you hate mayonnaise, it is probably because you’ve never had anything but the homogenized, bland, store-bought variety. Real mayonnaise, if fresh, is made of three simple ingredients: egg yolks, oil & acid. I prefer farm-fresh eggs, olive oil and lemon. The are hundreds of combinations each with their own quirks and complexities.
