Most people associate Georgia with peaches, or maybe peanuts (thanks to Jimmy Carter), but I always think of barbeque ribs or creamy lobster bisque. Random, I know. I grew up in a suburb of Atlanta as a young girl, and barbeque ribs were a standard at least one night a week during the summer. Once a teenager, I made treks to Savannah with my mother to have table-side Caesar salad and lobster bisque from our favorite restaurant. I usually like to get food as close to the source or source process as possible. But, I cannot bring myself to love Mexican chocolate. Most of the world uses a conche for varying lengths of time to incorporate cocoa butter within chocolate. The longer the processing, the smoother the chocolate. But Mexican chocolate is still often stone-ground which produces a gritty texture. I am addicted to dark chocolate, but I want it smoooooth.
