Have you heard about the cannulated cows? Wow. Who knew there were cows with port holes? I was watching the Wisconsin edition of Weird Foods America. And a professor at UW-Madison Department of Dairy Science was explaining how they put port holes in the side of cows to study the “ruminant’s digestive process” or the chewing of the cud aka “ruminating.” Into my miscellaneous food trivia file THAT tidbit went; THEN, I received this Call from Ruminate Magazine. Chia seeds are fascinating. I have started using them to make raw, small-batch refrigerator jam from overripe fruit. Yum. The seeds are hydrophilic, absorbing up to 12 times their weight in liquid when soaked. While soaking, the seeds develop a mucilaginous gel-like coating that gives my jam a fantastic texture.
